Chef Mario Batali Leftovers, with Pork Tenderloin

Oh wow, these were some great leftovers! Well, really, only the sauce was a leftover … This is the same green sauce I made the other day when I made Mario’s Babysitter’s Chicken with Green Sauce. This evening I seasoned a whole pork tenderloin, then gently grilled it till it was medium rare. I sliced the tenderloin, laid it on a bed of wild rice with chopped veggies, laid the tenderloin slices on it, topped it with the reheated green sauce, squeezed a little more fresh lime juice on it, then garnished with the lime wedges. We’re both full, but we sure do want more!
