At one point Shelby wrote:<\/p>\n<blockquote><p>Next time I make this, it&#8217;s going to be with peaches, since peach cobbler and cornbread are mainstays of any good southern square, why not compact the two into a glorious, sweet, savory, crumbly dish of summer? Just replace the strawberries and rhubarb with some sliced peaches (I&#8217;d imagine about two-or-so pounds would do just fine, a few tablespoons of sugar and a tablespoon of cornstarch, bake the peaches a bit before topping with the biscuit mixture. Once topped, just bake as below for about 25 minutes.<\/p><\/blockquote>\n<p>I was thinking to myself, &#8220;That sounds good &#8230; use the filling from my mom&#8217;s 1930&#8217;s-era cobbler with Shelby&#8217;s topping. What a great idea!&#8221; So I came back here to point Shelby to the recipe.<\/p>\n<p>I was totally dumbfounded. Searching my own blog for the recipe came up with &#8230; <em>nothing!<\/em>\u00a0The recipe\u00a0just wasn&#8217;t here. Mary was actually kinda flabbergasted; &#8220;Oh, I don&#8217;t even believe that!&#8221; Well honey, you should, because it&#8217;s true.<\/p>\n<p><strong>I&#8217;ve never posted the recipe for my mom&#8217;s best-ever, classic, old-fashioned, Mary-asks-for-it-instead-of-birthday-cake Peach Cobbler.<\/strong><\/p>\n<p>Geez Louise &#8230;<\/p>\n<p>I&#8217;ve made this quite a few times over the past few years. In fact, the image at the beginning of this post is almost three years old. I know this because that year, 2005, was the first year Mary asked for this cobbler <em>instead<\/em> of the traditional birthday cake for her September 25th birthday. I made it a point to ensure that was one of the best batches of peach cobbler I&#8217;d made yet, not only to honor Mary&#8217;s birthday, but also so I could take a picture for <a href=\"http:\/\/www.micuisine.com\/mi_cuisine\/recipes\/pdfs\/peachcobbler.pdf\" target=\"_blank\" rel=\"noopener\">the PDF version of the recipe<\/a>. That&#8217;s where this photo came from.<\/p>\n<p>Mom&#8217;s Peach Cobbler is actually simpler than the recipe makes it appear. Sure it&#8217;s a lengthy process, but the steps themselves are rather simple. This recipe has stood the test of time, from when\u00a0my mom Joyce first started making it when she was a kid in the 1930\u02b9s (we\u02b9re not quite sure who she learned it from), to\u00a0my own kids making it themselves today. The kids do make mistakes in reading recipes (one young man once used 1\/4 cup salt in this particular recipe instead of the specified 1\/4 tsp salt in the filling), but that\u02b9s a good way for them to learn to pay attention to details.<\/p>\n<p>One more thing: Obviously this cobbler tastes best when fresh peaches are used. style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add the milk, flour, baking powder and salt (sift these last three together to really do this right), mixing it all together until it\u02b9s smooth again.<\/span><\/div><\/li><li id=\"wprm-recipe-6359-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">With a rubber spatula, cover the peaches with the creamed mixture. This mixture might be a bit stiff, and that\u02b9s ok. Just make sure each peach wedge is covered by some of it.<\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">For The Topping<\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-6359-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Mix the salt, the sugar and the cornstarch together. (If the cornstarch has been in the cupboard for a while, pitch it and get a new one!)<\/span><\/div><\/li><li id=\"wprm-recipe-6359-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Sprinkle this dry mixture over the filling you made before.<\/span><\/div><\/li><li id=\"wprm-recipe-6359-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Boil some water (really boil it, don\u02b9t nuke it, and don\u02b9t use just hot tap water either) and pour the measured water over the completed dish.\u00a0<\/span><\/div><\/li><li id=\"wprm-recipe-6359-step-1-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Bake the cobbler in the preheated oven for one hour.<\/span><\/div><\/li><li id=\"wprm-recipe-6359-step-1-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Cool the cobbler for a while on a rack, before chilling it in the fridge for at least a couple hours before serving.<\/span><\/div><\/li><\/ul><\/div><\/div>\n<div id=\"recipe-video\"><\/div>\n<div id=\"recipe-6359-notes\" class=\"wprm-recipe-notes-container wprm-block-text-normal\"><h3 class=\"wprm-recipe-header wprm-recipe-notes-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none\" style=\"\">Notes<\/h3><div class=\"wprm-recipe-notes\"><span style=\"display: block;\">2 pounds of peaches?
