Care to share your own?<\/p><\/blockquote>\n<p>I don&#8217;t have any of my own because, up until now, I&#8217;ve not cooked rabbit. I&#8217;ve eaten plenty, that&#8217;s for sure. If you look at the first comment on Sarah&#8217;s post, that&#8217;s my oldest\u00a0son there. He and I both really like rabbit, as do his brothers and sister.<\/p>\n<p>But my wife Mary has always reacted negatively to the possibility of\u00a0eating rabbit &#8230; that is, until now.<\/p>\n<p>Last week in response to Sarah&#8217;s question, I headed over to <a target=\"_blank\" href=\"http:\/\/foods.pel-freez.com\">the Pel-Freez web site<\/a> and ordered their free cookbook. As Mary browsed through this booklet a couple days ago, the recipe for <em>Rabbit &amp; Sausage Gumbo<\/em> caught her eye. Before I could\u00a0even wrap my brain around the possibility of cooking rabbit, she had half the ingredients for the gumbo\u00a0in a shopping cart!<\/p>\n<p>Once Mary had <em>almost<\/em> everything together, I headed out and picked up 3-1\/4 pounds of the necessary frozen domestic rabbit.<\/p>\n<p>But there was something missing. The fil\u00e9 powder.<\/p>\n<p>Now this\u00a0fil\u00e9 powder stuff\u00a0doesn&#8217;t look like much. You don&#8217;t even add it until it&#8217;s time to serve the dish. But it was likely necessary. Had I ever had it in any of the gumbo I&#8217;d eaten here in the Great White North? I haven&#8217;t a clue. What the Heck is it anyway, the stuff you scrape off a French file?<\/p>\n<p>Wait, it&#8217;s &#8230; what?? <a target=\"_blank\" href=\"http:\/\/www.nolacuisine.com\/2006\/07\/03\/homemade-file-powder\/\">Ground sassafras leaves<\/a>? Huh &#8230; I&#8217;d never heard of such a thing. Sassafras goes in root beer &#8230; some tea, but &#8230; gumbo? Well, alright, if you insist &#8230;<\/p>\n<p>Try to find fil\u00e9 powder, aka Gumbo Fil\u00e9, in SE Michigan\/NW Ohio. Go ahead, I dare ya&#8217;.<\/p>\n<p>Yesterday morning I was on the road over two hours looking for fil\u00e9 powder. I&#8217;d discovered <a target=\"_blank\" href=\"http:\/\/shop.zatarains.com\/zatarains\u00ae-gumbo-fil\u00e9-p-1547.html?=\">Zatarain&#8217;s makes some<\/a> so that&#8217;s the one I went looking for. I went to two Kroger&#8217;s, a <a target=\"_blank\" href=\"http:\/\/www.gfsmarketplace.com\">GFS Marketplace<\/a>, <a target=\"_blank\" href=\"http:\/\/www.houseofmeats.com\">Lee William&#8217;s House of Meats<\/a>, <a target=\"_blank\" href=\"http:\/\/www.andersonsinc.com\">The Anderson&#8217;s<\/a> &#8230; Staff at these stores kinda looked at me funny (I would have too), and tried to even correct me &#8230; &#8220;<em>filet<\/em> powder?&#8221; &#8230; &#8220;<em>phyllo<\/em> powder?&#8221; &#8230; &#8220;<em>flea<\/em> powder?&#8221; &#8230;\u00a0yeah, sure, I put flea powder in my gumbo, don&#8217;t <em>you??<\/em><\/p>\n<p>So I&#8217;m wandering through the <a target=\"_blank\" href=\"http:\/\/www.shopsofos.com\">Sofo Foods<\/a>\u00a0store in north Toledo wondering why the <em>hey<\/em> I&#8217;m wandering through an Italian food supplier&#8217;s shop looking for something Creole-specific, when I suddenly stopped.<\/p>\n<p>At the bottom of <a target=\"_blank\" href=\"http:\/\/www.nolacuisine.com\/2006\/07\/03\/homemade-file-powder\/\">this page<\/a> someone had\u00a0written:<\/p>\n<blockquote><p>**Update** I recently noticed a container of Tony Chachere\u2019s Fil\u00e9 powder at the store and picked some up. It\u2019s the real deal, pure Sassafras, just like my homemade. Highly recommended!<\/p><\/blockquote>\n<p>Well I&#8217;ll be <em>fo-<\/em>shizzled. That&#8217;s exactly what I was staring at! <a target=\"_blank\" href=\"http:\/\/www.tonychachere.com\/seasoning\/\">Tony Chachere&#8217;s Gumbo Fil\u00e9<\/a>, in Sofo Foods in north Toledo. Who woulda thunk it??<\/p>\n<p>After grabbing the Tony Chachere&#8217;s brand and heading up M-24 back toward Michigan, I had this crazy thought. Right there, south of the state line is <a target=\"_blank\" href=\"http:\/\/www.blogsmonroe.com\/food\/?p=449\">The Fish Market I blogged about late last week<\/a>. I had this thought, that maybe I should make some seafood gumbo at some point. I mean, there was enough fil\u00e9 powder there for &#8230;<\/p>\n<p><em>D&#8217;OH!!!<\/em><\/p>\n<p>I hit the brakes, parked the van\u00a0and headed into The\u00a0Fish Market. Steve Gale\u00a0was behind the counter, and I asked if he had any fil\u00e9 powder. &#8220;Sure do, it&#8217;s right there&#8221;, he said, pointing at some glass jars on the counter.<\/p>\n<p>I really need to <em>not<\/em> do these kinds of funky ingredient searches before ingesting enough caffeine for the day\u00a0&#8230;<\/p>\n<p>This evening as Mary tried this dish she just fell in love with it. She actually said, &#8220;Honey I get the feeling this is going to become one of my favorites, something I ask you to make.&#8221; Sounds good to me! This stuff is nice and chunky, the veggies al dent\u00e9, the rabbit nice and tender, a spot of heat from the cayenne, and the amazing smell and flavor of sassafras, all rolled into one seriously-nice dish.<\/p>\n<p>Mary didn&#8217;t like the thought of eating rabbit. She&#8217;s had this, and wants more, as do I. If you&#8217;re leary of trying rabbit for whatever reason, here&#8217;s where to start enjoying it.<\/p>\n<p>That is, after you track down the danged fil\u00e9 powder &#8230;<\/p>\n<p><em>Special thanks to the kind folks at <a target=\"_blank\" href=\"http:\/\/foods.pel-freez.com\">Pel-Freez Rabbit Meat, Inc.<\/a>\u00a0for\u00a0their express\u00a0permission for me\u00a0to post their recipe here at Luna Pier Cook.<\/em><\/p>\n<p><strong>Rabbit and Sausage Gumbo<br \/>\n<\/strong><font size=\"1\"><em>From &#8220;Recipes from Around The World: Rabbit, An International Delicacy&#8221;<br \/>\nUsed with permission of <\/em><a target=\"_blank\" href=\"http:\/\/foods.pel-freez.com\"><em>Pel-Freez Rabbit Meat, Inc.<\/em><\/a><em>, Rogers, Arkansas<\/em><\/font><\/p>\n<p>2-1\/2 to 3 lbs Pel-Freeze Rabbit, thawed<br \/>\n6 cups water<br \/>\n3\/4 tsp salt<br \/>\n1\/2 tsp pepper<br \/>\n3 Tbsp oil<br \/>\n1 medium onion, chopped<br \/>\n1 bell pepper, chopped<br \/>\n3 celery stalks, including leaves, chopped<br \/>\n3 medium garlic cloves, minced<br \/>\n6 oz Kielbasa (or other smoked sausage) cut in 1\/2 &#8221; pieces<br \/>\n1\/2 lb okra, cut in slices<br \/>\n1\/4 tsp cayenne pepper<br \/>\n3\/4 tsp thyme<br \/>\n1 bay leaf<br \/>\n1 16 oz can peeled tomatoes<br \/>\n2 tsp fil\u00e9 powder<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" border=\"0\" align=\"left\" width=\"259\" src=\"http:\/\/www.micuisine.com\/images\/lunapiercook\/rabbitgumbo\/rabbitgumbo_saute.jpg\" height=\"197\" style=\"width: 259px; height: 197px\" \/><\/p>\n<p>In a heavy 4-quart saucepan, simmer rabbit, salt and pepper in water for 20 to 30 minutes or until tender. Remove rabbit from broth and let cool. Remove meat from bone in large pieces and return meat to broth in pan. In a skillet, heat oil. Saut\u00e9 onion, pepper, celery and garlic for 3 minutes, stirring often. Add sausage, okra, cayenne, thyme and bay leaf. Continue cooking for 3 to 4 minutes. Add vegetable mixture and tomatoes to rabbit. Simmer 30 minutes. Stir in fil\u00e9 the last few minutes before serving. Serve over rice with a green salad and crusty French bread. Serves 4 to 6.
